Let's first get raw list as given, with non given values not researched. As the non given ones were only 4, I will not research it (I tried but got only one "born beginning of 17th C."). Then, same raw list, I will give two halves. Second one starts with Falvio Chigi, born 1810, after 1800.

This time, we have a ridiculously clear difference between 1st and 2nd halves, partly due to some lifespans in the first half being shorter than I think usual with so many of them, though not in themselves, partly due to second half including some clear modern standards of living examples.

And probably, in the 19th C. the lifestyle of clergy changed and became more bourgeois, this is not speculation, it is a known fact in the context of France, once clergy had to fight for recognition after the revolution, they did so by making their lifestyle less bohemic than some of the earlier examples. St. Jean-Marie Vianney was ordained in 1815, but a few decades later, a man as bohemic as he would probably not have been ordained. Even earlier, back in the 18th C. Benedict Joseph Labre was rejected from monastery. Both were, as I thought I recalled Chesterton, but he may just have lauded it in a case like St. Louis IX, tertiaries of the Franciscan order.

With a very settled and sober lifestyle comes of course longer lifespans. First half has median between 57.5 and 67.2 years, or more classic median, (57.5 + 67.2) / 2 = 62.35 years. Second half has it at 74.8 years' age.
